Green tea and red tea begin with the same plant, Camellia sinensis. Common English usage calls red tea black tea. The Chinese term hong cha, red tea, refers to the colour of the liquor, while the English name refers to the darkened dry leaf.

The distinction between the two classes comes through processing. For green tea, heat enters early. For red tea, the maker allows extensive oxidation before the final drying.

Green tea: heat comes first

Fresh tea leaf begins changing as soon as it is picked. In green tea making, the leaf is heated early by steaming, pan-firing or another fixing method. This step brings the initial oxidation to a close.

The leaf is then rolled or shaped and dried. Each operation matters. A steamed Japanese green and a pan-fired Chinese green share the defining early fixation, yet their form and cup can be very different.

Green tea is therefore a fully made tea rather than a raw leaf. Timing, heat, movement and drying all belong to its craft.

Red tea: oxidation comes first

Red tea follows another sequence. The leaves are usually withered to lose moisture, then rolled or otherwise worked. This handling prepares the leaf for extensive oxidation. Drying closes the process at the maker's chosen point.

Across the world, this class includes many regional styles, cultivars and methods. The name tells us the broad processing family. It cannot predict one fixed flavour, strength or colour for every tea within it.

Oxidation and fermentation are different

Older trade language sometimes describes red tea as fermented. Oxidised is the more precise term for this class. The change belongs to the worked leaf during manufacture.

Dark teas follow another path. Ripe puer, for example, receives a warm, moist piling stage in which microorganisms take part. That is fermentation. Keeping the words separate helps the six tea classes remain legible.

Caffeine follows the leaf and the brew

Both green tea and red tea naturally contain caffeine because both come from Camellia sinensis. Class alone gives no reliable ranking for the amount in a cup.

Cultivar, leaf grade, harvest, quantity, water temperature, steeping time and repeated infusions can all affect what enters the bowl. A simple rule that assigns more caffeine to every red tea or less to every green tea loses this variation.

Reading the sequence at the table

The maker's sequence remains visible in the finished tea. Green leaves often retain colours closer to the fresh material, although steaming, pan-firing, shaping and drying create a wide range of appearances. Red-tea leaves have passed through extensive oxidation before drying and usually show deeper brown or black tones.

These are signs rather than fixed sensory promises. A pale green tea may carry a strong roast. A red tea may be delicate rather than brisk. Cultivar, season, leaf grade and finishing choices keep each class broad.

The infused leaf adds another record. Rolled leaves open, cut leaves show their smaller grade, and the liquor reveals the colour that gives hong cha its Chinese name. Attention stays with observable craft: leaf, water, time, colour and successive infusions.

This is the practical value of the distinction. It offers a precise way to read how the tea was made without turning one class into a standard for the other.

One leaf, two sequences

The clearest way to remember the distinction is through timing. Green tea receives its fixing heat early, before extensive oxidation. Red tea is withered and worked, allowed to oxidise extensively, then dried.

From that shared botanical beginning, countless teas become possible. A class offers the first map, not the whole territory. The particular leaf, the garden, the season and the maker complete the tea in the bowl.
